Have you ever tried alternating wheat flour with chickpea flour?
Obtained by stone-grinding 100% ITALIAN legumes, our chickpea flour is particularly rich in vegetable proteins and important substances such as iron, calcium and phosphorus, as it maintains the nutritional properties of the legumes from which it is obtained intact.
Chickpea flour is used to prepare low focaccias and Sicilian panelle (due to its very low or almost zero gluten content).
It can also be used to prepare many vegan dishes!
